Enjoy a meticulously crafted five-course menu (four savory courses and one dessert), each perfectly paired with a distinct expression of Nanbu Bijin sake—produced by the celebrated brewery founded in 1902 in Ninohe City, Iwate Prefecture. Known as the “Southern Beauty,” Nanbu Bijin reflects the pristine natural surroundings and the brewery’s commitment to clean, elegant sake. Sake Specialist Alex Bemis will guide you through each pairing, sharing expert insights and cultural context to deepen your appreciation of Japan’s rich sake tradition.

The course begins with seasonal starters and appetizers, followed by a progression of single piece nigiri and maki, each thoughtfully selected and served to elevate the flavors of the fish. Available exclusively at Shimogamo Gilbert every Wednesday and Thursday starting June 25. Reservation required. Due to the nature of the course, we are unable to accomodate dietary restrictions or substitutions.
