The course begins with seasonal starters and appetizers, followed by a progression of single piece nigiri and maki, each thoughtfully selected and served to elevate the flavors of the fish. Available exclusively at Shimogamo Gilbert every Wednesday and Thursday starting June 25. Reservation required. Curated by Executive Chef Daisuke Itagaki, this six-course dinner showcases the pristine flavors of Hokkaido—featuring delicacies such as seasonal seafood and rare wagyu—artfully paired with an exceptional lineup from the House of Suntory, including limited and rare releases not easily found elsewhere. Each course is a tribute to Japanese craftsmanship, where culinary artistry meets the spirit of innovation and tradition.
